Making your own peanut butter is much easier than it may sound, and it only takes a couple of seconds! The Vidiem Mixer-Grinder’s chutney jar has powerful blades that quickly and effectively grind nuts into smooth, creamy nut butters. Using unsalted nuts allows you to be in control of how much salt is added (if any!). Our version gets a touch of caramel-like sweetness from coconut sugar and a tropical kick from shredded coconut.


Ingredients:

1 cup unsalted peanuts, roasted or unroasted

Salt, to taste

1 tsp coconut sugar

2 Tbsp unsweetened, shredded coconut

Directions

  1. Set up your Vidiem Mixer-Grinder by placing the chutney jar onto the motor base.
  2. Add the peanuts, salt, and coconut sugar. Secure the lid.
  3. Pulse a few times, until the peanuts are finely ground. Make sure to hold the lid in place so it remains secure.
  4. Blend on speed 1 for 10-15 seconds.
  5. Scrape down the sides of the jar if necessary and add the shredded coconut.
  6. Continue blending on speed 1 until smooth.

Yield: About ⅓ cup

Storage Store in a glass jar or container with a tight-fitting lid for up to 1 week.
