Many vegan cheese substitutes are made with nuts, but this alternative-to-the-alternative is completely nut free! Nutritional yeast provides a cheesy flavor and oats create a smooth consistency. Blending oats at high speed with boiling water creates a thick, creamy texture, making this “cheese” sauce perfect for veggies, chips, or even mac & cheese.

Ingredients:

½ cup rolled oats

2 Tbsp nutritional yeast

½ Tbsp cornstarch

½ tsp kosher salt

3 oz jarred roasted red peppers, drained

1 Tbsp minced onion

1 Tbsp lemon juice

1 tsp hot sauce

¾ - 1 cup boiling water

Directions

  • 1. Set up your Vidiem Mixer-Grinder by locking the chutney jar onto the motor base.
  • 2. Add the oats, nutritional yeast, cornstarch, and salt. Secure the lid and pulse a few times to combine.
  • 3. Add all remaining ingredients except boiling water. Secure the lid and pulse a few times to combine.
  • 4. Add ¾ cup boiling water. Secure the lid and blend on speed 1 for 10 seconds.
  • 5. The sauce will thicken as it blends and will thicken further as it cools. If you prefer a thinner sauce, add the remaining ¼ cup water and blend again until just combined.

Yield: About 1 cup

Storage:Store in an airtight container for up to1 week.
