Basic Coconut Chutney

This basic coconut chutney is a perfect accompaniment for dishes like dosa and idli, and is easily customizable based on your flavor preferences.
Ingredients: |

1 cup chopped fresh coconut |

1 green chilli, chopped |
|||
➤ |
1-inch piece of fresh ginger, chopped |

Cold water |

Salt, to taste |
Directions
- If using pre-cut refrigerated or frozen coconut, soak in cold water for 1 hour.
- Set up your Vidiem Mixer-Grinder by placing the 1-liter jar onto the motor base.
- Add the chopped coconut, green chile, and ginger to the jar.
- Add 3-4 Tbsp of cold water and season with salt to taste.
- Secure the lid in place and pulse a few times to start the grinding process.
- Blend for about 15 seconds.
- If desired, add more water and blend again to reach your desired consistency.
Yield: About 1 ¼ cups
Pro Tips
- Just before serving, fry some curry leaves, mustard seeds, and red chili flakes in hot oil and pour on top of the chutney
- Blend roasted peanuts or channa dal with the coconut mixture for a nutty flavor
