Peanut Chutney

Peanut chutney is a spicy, nutty condiment that’s perfect for idli, dosa, or even to spread on toast. With the Vidiem Mixer-Grinder, it comes together in minutes!

 

Ingredients:

1 cup unsalted peanuts

¼ yellow onion, chopped

2 cloves of garlic, chopped

1 1-inch piece of ginger, chopped

2 tsp dried chili flakes

½ tsp ground coriander

2 tsp olive oil

Salt to taste

Cold water

 

Directions

  1. Set up your Vidiem Mixer-Grinder by placing the chutney jar onto the motor base.
  2. Heat 1 teaspoon of oil in a pan over medium heat.
  3. Add the peanuts and toast for about 2 minutes, or until lightly browned.
  4. Remove the peanuts from the pan and set them aside to cool. Add the remaining teaspoon of oil to the pan, along with the onion, garlic, ginger, chili flakes, and coriander. Sauté until fragrant.
  5. Add the peanuts and onion mixture to the chutney jar. Pour in a small amount of cold water (about ¼ cup) and season with a pinch of salt.
  6. Secure the lid and pulse 3-4 times.
  7. For a thinner chutney, add a bit more water and blend again.

Yield: About 1 ¼ cups

 

Tips

➤   Adjust the spice levels to your taste

➤   Just before serving, fry some curry leaves, mustard seeds, or urad dal to use as a topping
