Soft-Serve Banana “Ice Cream”

We love simplicity and this one-ingredient base recipe is a keeper. And it comes right in time for summer: it’s nutritious, refreshing, and only takes minutes to make. It’s a great base to add your favorite smoothie ingredients to. Sometimes simple is best.

Ingredients:

2 frozen bananas, sliced (about 1 cup)

Directions

  1. Set up a Vidiem Mixer-Grinder by placing the chutney jar onto the motor base.
  2. Add the banana slices and secure the lid.
  3. Pulse a few times, until banana slices break up into small pieces, holding the lid tightly in place.
  4. Blend on Speed 1 until mixture stops moving and sticks to the sides of the jar (about 10 seconds). Never run Vidiem Mixer-Grinder for more than 60 seconds at a time, to avoid overheating the product.
  5. Scrape down the sides of the jar with a rubber spatula and replace the lid.
  6. Continue blending on Speed 1 until smooth and creamy, scraping down the sides as necessary.
  7. Enjoy right away or freeze to desired firmness.
  8. Optional: To boost nutrition and flavor, add nut butter, cocoa powder or other frozen fruit once the banana mixture is well-processed (see below for more ideas).

Yield: About 2 cups

Storage Transfer to a freezer-safe container (with a tight fitting lid) and store for up to 3 days.

Mango-Banana "Ice cream"

Ingredients:

2 frozen bananas, sliced (about 1 cup)

½ cup frozen mango

¼ tsp ground cardamom (optional)

2 frozen bananas, sliced (about 1 cup)

1 tbsp Peanut butter

Maple syrup (to taste)

Pinch of salt (optional)

Chocolate Banana "Ice cream"

Ingredients:

1 tbsp cocoa powder

Maple Syrup (to taste)
