Parsley Pesto

This parsley pesto is a great variation on traditional pesto, perfect for when basil is not in season!
Ingredients: |

1 cup parsley, packed |

½ cup walnuts, roughly chopped |

2 garlic cloves, roughly chopped |
|||
➤ |
¼ cup shredded parmesan cheese |
|||
➤ |
¼ cup olive oil |

Salt, to taste |
Directions
- Set up your Vidiem Mixer-Grinder by placing the 1-liter jar onto the motor base.
- Add the parsley, walnuts, garlic, parmesan, olive oil, and salt to the jar.
- Secure the lid in place and pulse a few times to start the grinding process.
- Blend for about 10 seconds.
- If necessary, scrape down the sides of the jar with a rubber spatula and blend again until your desired consistency is reached
Yield: 1/2 cups
