Sun Dried Tomato Pesto

Sun-dried tomato pesto is a perfect accompaniment for a quick and bright pasta dish, as a sauce for fish, as sandwich spread, or even as a seasoning ingredient for soups, grain-based salads.
Using the Vidiem Mixer-Grinder chutney jar, this recipe comes together in minutes for a quick and easy snack or summer meal.

½ cup sliced sun dried tomatoes |

¼ cup grated Parmesan cheese |

¼ cup walnuts |
|||
➤ |
¼ cup roasted red peppers, drained |

2 tsp capers, drained |

½ tsp sea or kosher salt |

½ tsp chili flakes |
|||
➤ |
¼ tsp dried basil |
|||
➤ |
1 clove of garlic, crushed |

¼-⅓ cup extra-virgin olive oil |
Directions
- Set up your Vidiem Mixer-Grinder by placing the chutney jar onto the motor base.
- Add all of the ingredients to the jar and secure the lid in place.
- Pulse 4-5 times to start the grinding process.
- Blend on speed 1 for about 10 seconds. If the mixture is too thick, scrape down the sides of the jar with a rubber spatula and add a bit more olive oil.
- Continue blending until your desired consistency is reached.
Yield: About ¾ cup
Tips
➤ Start with ¼ cup olive oil and reserve the rest to add in case the mixture is too thick. If you are using jarred sun-dried tomatoes, you can use the oil they are packed in for this recipe or for another use such as a salad dressing, marinade, or to drizzle over pasta.
