Sun Dried Tomato Pesto

Sun-dried tomato pesto is a perfect accompaniment for a quick and bright pasta dish, as a sauce for fish, as sandwich spread, or even as a seasoning ingredient for soups, grain-based salads.

Using the Vidiem Mixer-Grinder chutney jar, this recipe comes together in minutes for a quick and easy snack or summer meal.


Ingredients:

½ cup sliced sun dried tomatoes

¼ cup grated Parmesan cheese

¼ cup walnuts

¼ cup roasted red peppers, drained

2 tsp capers, drained

½ tsp sea or kosher salt

½ tsp chili flakes

¼ tsp dried basil

1 clove of garlic, crushed

¼-⅓ cup extra-virgin olive oil

 

Directions

  1. Set up your Vidiem Mixer-Grinder by placing the chutney jar onto the motor base.
  2. Add all of the ingredients to the jar and secure the lid in place.
  3. Pulse 4-5 times to start the grinding process.
  4. Blend on speed 1 for about 10 seconds. If the mixture is too thick, scrape down the sides of the jar with a rubber spatula and add a bit more olive oil.
  5. Continue blending until your desired consistency is reached.

Yield: About ¾ cup

 

Tips

  Start with ¼ cup olive oil and reserve the rest to add in case the mixture is too thick. If you are using jarred sun-dried tomatoes, you can use the oil they are packed in for this recipe or for another use such as a salad dressing, marinade, or to drizzle over pasta.
