Tahini Green Goddess Dressing

Green goddess dressing is a bright, creamy condiment with many uses, from salads to marinades to a dip for vegetables. This version gets its creaminess from tahini instead of the traditional dairy ingredients and it comes together in just a few minutes!
Ingredients:
⅔ cup parsley leaves
⅓ cup cilantro and basil, mixed
1 clove of garlic, crushed
2 tsp capers, drained
⅓ cup tahini
Juice of half a lemon
Salt to taste
⅓ cup cold water
Directions

- Add the herbs to the jar, followed by the capers, garlic, tahini, lemon juice, and salt.
- Secure lid in place and pulse a few times to grind the mixture into a paste.
- Scrape down the sides of the jar with a rubber spatula.
- Pour in the water, secure the lid, and blend on speed 1 until smooth.
- Adjust seasoning to taste.
Yield: About 1 ½ cups
