Almond Butter-Banana Pancakes

Using your blender to make pancake batter helps you achieve a fluffy, smooth texture much faster than mixing by hand. In this recipe, we use a banana for sweetness (no pre-mashing required!) and a scoop of almond butter for a protein boost. Simply add all your ingredients to the Vidiem Mixer-Grinder’s large jar and blend just a few seconds until smooth!
Ingredients:
1 cup whole wheat flour
1 tsp baking powder
Pinch of salt
½ tsp cinnamon
1 Tbsp sugar (can reduce if using a very ripe banana)
⅔ cup milk of choice
1 egg
1 small banana, broken into chunks
1 Tbsp almond butter
1 Tbsp butter, as needed for cooking
Directions
- 1. Set up your Vidiem Mixer-Grinder by placing the large jar onto the motor base.
- 2. Add all of the dry ingredients to the jar. Then, add milk, egg, banana, and almond butter.
- 3. Secure the lid and blend on speed 1 for a few seconds, until just combined.
- 4. Preheat a medium nonstick skillet over medium-high heat. Add about ½ a tablespoon of butter to the pan to melt.
- 5.Use a ¼ cup measuring cup to scoop batter into the skillet. Flip pancakes when the first side is golden brown, about 2 minutes.
- 6. Serve immediately.
Yield: 10-12 pancakes
Storage: Wrap leftovers and store in the fridge for up to 2 days
