Basic Pancakes

Making pancake batter in a blender helps you achieve a perfectly fluffy texture. This basic recipe is easily customizable, so feel free to get creative! Once the batter is finished blending, fold in your mix-ins by hand (like chocolate chips or berries) and cook until golden on both sides.
Ingredients:
1 cup all purpose flour
½ tsp baking powder
½ tsp baking soda
1 Tbsp sugar
Pinch of salt
3/4 cup milk of choice
1 egg, lightly beaten
½ tsp vanilla extract
1 Tbsp butter, as needed for cooking
Directions
- 1. Set up your Vidiem Mixer-Grinder by placing the chutney jar onto the motor base.
- 2. Add all of the dry ingredients to the jar. Then, add milk, egg, and vanilla extract
- 3. Secure the lid and blend on speed 1 for a few seconds, until just combined.
- 4. If adding any mix-ins such as chocolate chips or berries, add them to the jar and stir to combine.
- 5. Preheat a medium nonstick skillet over medium-high heat. Add about ½ a tablespoon of butter to the pan to melt.
- 6. Use a ¼ cup measuring cup to scoop batter into the skillet. Flip pancakes when the first side is golden brown, about 2 minutes.
- 7. Serve immediately.
Yield: 10-12 pancakes
Storage:Wrap leftovers and store in the fridge for up to 2 days
