Cabbage Slaw

The tangy, vinegar-based dressing of this cabbage slaw pairs especially well with seafood and it comes together in seconds using the Vidiem Mixer-Grinder’s large jar. The slaw makes a great side dish for a variety of meals, but it pairs especially well with seafood!
Ingredients:
1 small head of green cabbage, thinly sliced
1 medium carrot, shredded
4 scallions, thinly sliced
½ cup cilantro, chopped (optional)
⅓ cup olive oil
⅓ cup apple cider vinegar
2 Tbsp honey
2 Tbsp grainy mustard
Salt, to taste
Directions
For the dressing:
- 1. Set up Vidiem Mixer-Grinder by placing the large jar onto the motor base.
- 2. Add the olive oil, vinegar, honey, mustard, and salt, and secure the lid.
- 3. Blend for a few seconds, until fully incorporated.
For the slaw:
- 1. Toss the sliced cabbage, carrots, scallions, and cilantro (if using) with the dressing and serve immediately.
Yield: About 4 cups of slaw
Storage Keep in the refrigerator, in a container with a tight-fitting lid, for up to 3 days.
