Gazpacho

Gazpacho is a refreshing cold soup made by blending raw vegetables––usually tomatoes and cucumbers, with olive oil, salt, garlic, and vinegar. Today, there are many different variations on this cooling summer dish, including the addition of herbs, avocado, and peppers. The addition of softened stale bread provides a thicker texture, but that is optional. Our recipe combines classic and modern ingredients to create a light, flavorful soup that is perfect for the hot summer season!
Ingredients:
½ cucumber, peeled and cut into large chunks
½ green bell pepper, cut into large chunks
1 small spring onion, roughly chopped
1 clove of garlic, crushed
2 large, ripe tomatoes, peeled
1 Tbsp vinegar or lemon juice
2 Tbsp olive oil
½ cup cubed stale bread, soaked in water to soften (optional)
Salt and black pepper, to taste
Directions
- Set up Vidiem Mixer-Grinder by placing the large jar onto the motor base.
- Add the cucumber, green pepper, onion, and garlic to the jar and secure the lid.
- Pulse a few times, holding the lid tightly in place.
- Scrape down the sides of the jar and add the tomatoes, vinegar or lemon juice, olive oil, bread (if using), and seasonings.
- Pulse again to chop the tomatoes, then blend on speed 1 for about 10 seconds, or until your desired texture.
- Chill before serving with toasted bread
Yield: About 2 cups
Storage Transfer to a container with a tight-fitting lid and keep in the refrigerator for up to 3 days.
