Soffritto

Soffritto is the perfect aromatic vegetable base that constitutes the foundation of italian cooking. Made of onions, carrots, celery, and sometimes garlic, it’s a great base for risotto, soups, stews and sauces. Browning your soffritto in butter or olive oil before adding the rest of your ingredients will give a great depth of flavor to any recipe.

Using the bowl attachment of your Vidiem Mixer Grinder, you can prepare a batch in just minutes to use immediately or to store for a later use.


Ingredients:

3 medium carrots, peeled and cut into 1-2 inch pieces

1 medium yellow onion, cut into large chunks

2 stalks of celery, cut into 1-2 inch pieces

2 cloves of garlic, peeled and crushed (optional)

 

Directions

  1. Set up your Vidiem Mixer-Grinder by locking the gear adapter onto the motor base and locking the bowl attachment onto the adapter.
  2. Add the carrots to the bowl and secure the lid.
  3. Place the large and small feeders into the tube on the lid, to close the opening.
  4. Pulse 6-8 times to start the grinding process.
  5. Blend on speed 1 for about 10 seconds, or until the carrots are coarsely chopped.
  6. Scrape down the sides of the bowl with a rubber spatula, and repeat the pulsing/grinding steps with the onion, then the celery and garlic (if using).
  7. Blend on speed 1 until all of the vegetables are finely chopped

Yield: About 2 cups

Storage Refrigerate in an airtight container for up to 2 days or freeze for up to 2 months..

Tips 

Make this recipe ahead and freeze it in ice cube trays to boost flavor in any dish. You can even cook with it straight from the freezer!

Use red onion for a sweeter, milder onion flavor.
