Coconut Milk

A rich, dairy-free alternative to milk, perfect in coffee or for use in baking and savory cooking.


Ingredients:

1 cup

80g

10%

Shredded coconut (sweetened or unsweetened)

3 cups

0.7 liter 

90%

Cold water


Directions

  1. Set up your Vidiem Mixer-Grinder by placing the filter into the juicer attachment.
  2. Place all of the coconut into your Vidiem. Set the filter lid in place and pulse about 5 times or until it is finely ground. 
  3. Pour 2 cups of cold water into the filter and secure the filter lid and blender jar lid. Blend on Speed 1 for about 5 seconds. Increase to Speed 2 and blend until smooth.
  4. Pour remaining cup of cold water into the filter. Replace the lid and blend until the desired consistency is reached.
  5.  Enjoy immediately or refrigerate in a clean glass container for up to 5 days.

Yield: 3 cups

Storage: Up to 5 days in the refrigerator


Pro Tips

  • Add honey, maple syrup or your favorite sweetener.
  • A pinch of sea salt will enhance the flavor.
