Green goddess dressing is a bright, creamy condiment with many uses, from salads to marinades to a dip for vegetables. This version gets its creaminess from tahini instead of the traditional dairy ingredients and it comes together in just a few minutes!


Ingredients:

⅔ cup parsley leaves

⅓ cup cilantro and basil, mixed

1 clove of garlic, crushed

2 tsp capers, drained

⅓ cup tahini

Juice of half a lemon

Salt to taste

⅓ cup cold water

Directions

  1. Green goddess dressing is a bright, creamy condiment with many uses, from salads to marinades to a dip for vegetables. This version gets its creaminess from tahini instead of the traditional dairy ingredients and it comes together in just a few minutes!
  2. Add the herbs to the jar, followed by the capers, garlic, tahini, lemon juice, and salt.
  3. Secure lid in place and pulse a few times to grind the mixture into a paste.
  4. Scrape down the sides of the jar with a rubber spatula.
  5. Pour in the water, secure the lid, and blend on speed 1 until smooth.
  6. Adjust seasoning to taste.

Yield: About 1 ½ cups
